a summer salad

July 25, 2011

During the summers, salads are my staple meal. I eat them daily. I try to spice things up, sometimes I have a mexican salad or a mediterraneanĀ salad. But, this is my “regular” salad. My homemade dressing is what turns this regular salad into something special. If you have any great salad recipes, I’d love to hear them . . . pretty please with cherries on top.

Red Vinaigrette Dressing Recipe:
Ingredients:
3 tbsp garlic powder
1/2 tsp dried oregano
1/2 tsp dried basil
1/4 tsp salt
1 cup red wine vinegar
1/2 cup agave nectar
1/2 cup olive oil

Directions:
1. Put dry ingredients in bowl and mix
2. Add red wine vinegar
3. Slowly pour in olive oil while whisking
4. Add agave nectar and stir
5. Drizzle dressing on salad and enjoy!

That dressing sounds great, I think I might just try it tonight. I have been eating a lot more salads lately, too. There was a post over at Dinner: A Love Story a few days ago that helped reignite my love for salads. If I knew how to make the link here in the comment I would, but basically she took several things that you might not usually put in your salad like corn, kale, and nectarines and chopped everything up pretty small before tossing with the dressing. No earth-shattering recipe really, but it just looked so good that I have been taking that approach lately and loving my salads even more. Thanks for the recipe!
